It's that time of year again! :D I remember visiting fairs at vivocity with my colleagues in the past to check out all the new variations in mooncake they had- there were always such pretty boxes, colours of mooncakes and interesting flavours each time.
This year I decided to have a go at making some snowskin mooncakes. I got the recipe from: https://sethlui.com/no-bake-snowskin-mooncake-recipe/
It's really easy to follow but I just increased the amount of shortening and water a little cause I couldn't get the dough consistency. It was fun trying to imprint different patterns using the mould. Next time I'll try adding some colour and making the paste more flavourful. This time I just used the regular lotus paste (with less sugar) :)

Also, here is a nice summary article about the different types of traditional mooncakes: https://www.straitstimes.com/lifestyle/food/taste-of-tradition-teochew-hainanese-and-hokkien-mooncakes
Update:
I tried making the Teochew baked mooncakes with flaky pastry as well! They taste nice warm :) I got the recipe from here: https://zestysouthindiankitchen.com/chinese-spiral-moon-cake-teochew-style/
