Burnt Basque Cheesecakes

Updated: Sep 26, 2020

Basque is a place in Spain. I've been seeing basque burnt cheesecakes in many cafes/on social media and realised it's the 2020 food trend in Singapore. I was wondering if/how this cake originated from Spain and yes, you can read more about that story here: https://www.tastecooking.com/spains-burnt-cheesecake-breaks-all-the-rules-and-lord-its-good/

I decided to try it to see how it tastes different to the American NY style creamy cheesecakes or Japanese fluffy cheesecakes I've tried.

Matcha Basque Cheesecake (zoomed in texture)

It tastes really creamy which surprised me since the surface is supposed to be 'burnt' but the inner cheese has an un-baked feel to it.

Personally I guess I still like cheesecakes which have a tinge of lemon to cut through the richness or some biscuit base to it :) Overall though it was an interesting cake to try as it strayed away from my conventional perception of "cheesecake".
