About 6 months ago, I was lucky to attend a macaron making certification class using my skills future credit at sunrice academy :) It was a really fun experience and I learnt many things about the intricacies of making this delicate pastry which I had come to love in Australia thanks to Adriano Zumbo and his funky flavoured macarons :P
We had failed attempts, but we learnt from them, because every little thing mattered for example temperature/resting time to ensure the perfect feet, that the shells rose, that there was an even shine on the shell etcetc. It was science! :D
Apparently, it was 2 nuns in France who first baked these pastries in Nancy and over time it spread across France. It was only in 1862 that Laduree in Paris popularized the macaron as we know it today : ) Though I'm unable to travel to France at the moment, it is really lucky that theses macarons have crossed the border instead and there is a small Laduree stand in Munich! :P I got a chance to try these really precious macarons and the flavours were very refined like saffron, champagne, rose and even one with silver foil ><
